A grilled turkey has a delicate, smoky flavor, which is perfect for the holiday table. Before beginning, make sure your grill lid is tall enough to accommodate a turkey. In order to provide enough heat to fully cook the turkey, you will need to add additional charcoal about halfway through grilling, heated in either a chimney or a separate grill. The 2 cups kosher salt may be substituted with 1 1/2 cups table salt.
