It’s a shame that fruitcake as a species gets such a bad rap. With its two key ingredients - rum and butter - it ought to be a hit. This recipe includes dried fruit, instead of the glowing, candied stuff we’ve all learned to associate with fruitcake, and is less dense and more cake-like than many fruitcake recipes. It has become a favorite of my friends and family around the holidays (even the skeptical ones), and is delicious by itself, or covered with a layer of almond paste. Fruitcake is also traditional for wedding cake in England, and makes a very rich, sophisticated dessert for luncheons or teas.

You sit down to Thanksgiving dinner in all its glory. A still-sizzling turkey, steaming mashed potatoes, and buttery rolls…it’s a beautiful site. Yet, something is missing.

What could be missing from such a magnificent spread? Beer! The characteristics of beer not only accentuate food beautifully when paired together, beer can also be used while cooking as a seasoning for basting, baking, or marinades.

Gwen Conley, our resident sensory goddess and quality assurance director, and Chris Lowe, our cellarman and quality assurance specialist, are here to help. With their culinary and, umm, beerinary expertise, we now present to you Thanksgiving Dinner - Flying Dog Style.

Appetizers

Dish: Crab dip
Beer(s): In-Heat Wheat Hefeweizen
The subtle acidity from our Hefeweizen will accentuate the rich crab flavors. Simply combine the beer with traditional cream cheese mixture and bake.

Dish: Brie Stuffed Pastry with Cranberry Orange Relish
Beer(s): In-Heat Wheat Hefeweizen and Raging Bitch Belgian Style IPA
Cook cranberries in the In-Heat Wheat. Then, pair the end product with Raging Bitch to bring out the slight brie funk and in-your-face tropical fruit flavors.

Dish: Stuffed Tomatoes with Goat Cheese
Beer(s): Raging Bitch Belgian Style IPA
Stuff tomatoes with bread crumbs and goat cheese and bake. Pair it with Raging Bitch to bring the two flavors together. (It’s been described as tasting like a pizza.)

Main Course

Dish: Turkey
Beer(s): K-9 Cruiser Winter Ale
Baste the turkey every 30 minutes with K-9 while it’s cooking. The roasted flavors from turkey skin will pair well with this beer’s caramel and gingerbread flavors.

Dish: Vegetarian Pot Pie or Shepherd’s Pie
Beer(s): Road Dog Porter or Gonzo Imperial Porter
Sauté meat (if desired) along with mushrooms, carrots, parsnips, garlic, thyme, and rosemary in Road Dog or Gonzo. Then, bake in pie crust as directed.

Sides

Dish: Salad
Beer(s): In-Heat Wheat Hefeweizen
Make your dressing with In-Heat Wheat, Olive Oil, Balsamic Vinegar, Dijon Mustard, Garlic, and Honey.

Dish: Sour Dough Stuffing with Apples, Walnuts, and Dates
Beer(s): Old Scratch Amber Lager
Substitute Old Scratch for 1/2 of the called-for broth. The caramel malts will bring out the bready and sweet flavors.

Dish: Doggie Style Mac and Cheese
Beer(s): Doggie Style Classic Pale Ale

Dish: Mashed Potatoes
Beer(s): Tire Bite Golden Ale
Once potatoes are cooked and mashed, add Tire Bite in small increments (1 oz. or so) to taste. The cracker malty flavors of the Tire Bite will enhance the starches and butter.

Dish: Spicy Sweet Potatoes
Beer(s): Old Scratch Amber Lager
Saute sweet potatoes in (butter, ginger, garlic, chipotle, Old Scratch Amber)

Dessert

Dish: Fudge Brownies
Beer(s): Gonzo Imperial Porter
Gently add about 6 oz. of Gonzo to the batter right before baking. The chocolate and roasted malts with chocolate fudge is a beautiful, beautiful combination.

Dish: Ginger–Brandy Cheesecake
Beer(s): Barrel-Aged Gonzo Imperial Porter and K-9 Cruiser Winter Ale
Replace Brandy with Barrel-Aged Gonzo, use gingersnaps as crust, and top with an orange glaze. Then, pair it with K-9 Cruiser, sit back, and thank your lucky stars for such a great combination of sweet and spicy flavors.
